Pucker Up for “Citrus Serenade” Prix-Fixe

A very close friend of mine purchased a new home in Auburn, and on a recent visit there I picked a Mandarin orange from a tree in her front yard. I peeled it immediately and when I bit into the first juicy section the vibrant flavors and sweetness were amazing.

Now, Chef Alexander will exploit the power of all kinds of citrus in Carpe Vino’s next prix-fixe dinner, “Citrus Serenade,” running the week of Tuesday, February 21 through Saturday, February 25. We’ll be offering four spectacular courses with options for just $40 per person plus tax and tip. You can make reservations by going to www.opentable.com or calling the shop at 530-823-0320. Please recognize that the citrus used by Chef Alexander is typically a component, not the main element of his dishes. Take for example the first course: Mussels Steamed in Citrus and their Leaves. . .very subtle (and a departure from his classic preparation); and Caramelized Grapefruit, Shaved Fennel and Endive salad, prepared with orange-scented beets puree, Wekiwa orange and shaved Parmesan.

You might also consider Halibut Escabeche with avocado, blood orange, pommelo cabbage salad and cumin tostadas. Escabeche, according to the chef, is a dish in which fish is first cooked and then covered in a marinade; it's the opposite of seviche, where fish is “cooked” by the acid in the marinade).

Main course choices are Roasted California Swordfish or Crispy Duck Confit or Daube of Beef Shortrib Provencal with orange-glazed carrots, black olive, polenta fritter, and red wine-Seville orange jus. The chef said explained that a “daube” is a classic French stew made with beef and red wine. It also refers to the name of the stew pot, called a “daubiere.”

For dessert it’s a Solomon’s choice between Orange-Olive Oil Poundcake or Meyer Lemon Panna Cotta. You only live once, so pick your poison.

We Could be First with Kindle-Powered Wine List

A wine shop and restaurant of our size just shouldn’t be on the bleeding edge of technology. . .but we are. Case in point is our latest advance: starting March 1, we will present our Restaurant Wine List on a Kindle Fire-powered platform. The list consists of more than 250 selections and represents about half of our total offerings in the store.

What makes a digitized wine list possible for Carpe Vino is the launch of the Kindle Fire, the smaller of the two tablets shown here. The iPad pricing is as large as its surface area, more than double a Kindle Fire.

Our ability to present our wine list on a Kindle Fire is a complex endeavor that dates back seven years to our very first investment in technology when we installed a computerized Point of Sales system, essentially a database of our entire inventory with a companion database of all of our clients. With this system we can, in real time, manage and market our business through a concise knowledge of what we have in stock and who is purchasing our products.

The next step in our evolution was launching an online store when Drew spearheaded the project to link our new shopping cart to our POS system. We effectively display selected inventory on the cart, complete with price, tasting notes and bottle shot.

The final challenge was to present our wine list on a Kindle Fire, and we accomplished this by mirroring content from our online store. Data is dumped into a new format created for the list and it is updated automatically four times each day so that as we sell out or add wines, these changes are reflected on the Wine List.

Drew has worked for more than a year with a Texas-based consultant (thanks for hooking us up, Ron Hart!) and our webmaster, Chris Tandoc, to put together all of the pieces of this very complex project—part database, part Internet, part design and all old-fashioned hard work.

Here's a screen shot of the new digitized Carpe Vino Wine List. Delivered via Kindle Fire tablet, the new list will be available in the restaurant starting March 1 (we hope!).

We expect to meet our deadline and have four Kindle-Fire tablets available for use in the shop to start. The Wine List features a navigation bar on the left broken down by varietal and region. Customers can also simply scroll through the entire list. Each entry features the name of the wine, vintage, appellation and price. If there is a six-bottle deal available, this is noted, along with any scores awarded by The Wine Advocate, Wine Spectator or the Wine Enthusiast.

Since the entire list is linked to the Internet and locked to our web site, users can get more information by clicking on individual wines to obtain tasting notes and a bottle shot. The only issue we’re concerned about is that once people get a Kindle Fire in their hands, they’re not going to want to give it up.

One huge residual benefit is that we decided to apply to become a Wine Spectator Restaurant Award recipient, a designation granted to fewer than 4,000 restaurants worldwide whose lists meet exacting standards. We have not applied in the past because other than our by-the-glass wine list, we have not had a formal presentation of what we have to offer. Our new Kindle approach changes everything.

What really made this new advance possible for Carpe Vino was the launch of the Internet-based Kindle Fire, which retails for $199. When the Apple iPad was introduced several years ago, we fantasized about using one of the new vendors creating programs for the tablet, but the cost was prohibitive. Basic iPads cost $500 each, plus programming and database management. With our system, we’re getting into the game at a fraction of the cost of going with iPads.

The very cool thing is, however, anyone with an iPad or a computer will be able to access the list, so our customers can peruse the wine list at home before they come for dinner. The list will not be password protected. . .we want everyone to be able to take a look at what we have to offer.

Top Wine List RankingCarpe Vino may be a 32-seat restaurant located on the distant edge of Sacramento, but its wine program is the equal of much larger establishments located in major cities across the country. The Old Town Auburn-based fine dining restaurant earned a spot among the Top 50 Restaurant Wine Lists by OpenTable, a leading reservations service representing some 12,000 establishments nationwide.

OpenTable’s “Diners’ Choice Awards” for this year are based on more than 10 million reviews penned by the online reservations firm’s clients from October 2010 to September 2011. Restaurants that made the list are located in 21 states.

Below you’ll find the text of a news release sent to Sacramento-area media.  Visit to Zap Revives     
 My Love of Zinfandel

On the morning of January 28 instead of helping set up for our annual “Wine Thing” tasting and sale, I was headed to San Francisco with my Ellen to attend ZAP, the Zinfandel Advocates and Producers annual blowout in The City.  This event is absolutely remarkable, drawing thousands of people to taste zinfandels from around the country and as far away as South Africa.

The first time you go to this event, you are blown away by the sheer magnitude of everything. . .from the number of wineries pouring to the number of people tasting to the sheer madness of the proceedings.  If you enter after 1 p.m. when the doors open to the general public, you are caught up in a stampede rivaling any panic in a Brazilian soccer stadium.

Once you survive the entrance scrum, the place is wall-to-wall humanity, with people pushing unapologetically to get close to the tables where wine is being poured.  It is a free-for-all that demonstrates the worst of the human condition. . .even more strident than the behavior displayed by Romney and Gingrich during the Republican debates.

Fortunately, as a wine “professional” I was admitted with a very orderly group of colleagues at 10 a.m. and I had the chance to explore the hundreds of wineries at my leisure.  It had been several years since I attend this event and that’s why I decided to forgo Wine Thing and get back in the game.  My goal was, of course, to find great new zin producers, but I also wanted to reconnect with many of the people with whom we have done business.

Almost immediately I ran into Bill Gillivray, owner of Dono dal Cielo out on Wise Rd. near Auburn.  Bill, his wife, Karen, and son, Hunter, specialize in zinfandel.  I also chatted with Chaim and Elisheva Gur-Arieh, owners of C.G. di Arie in El Dorado County.  When he worked for Quaker Oats, Chaim developed Capt'n Crunch cereal, and now he is a world class winemaker.  Loved his American Legend Zinfandel.

Met some great people, too.  Rick Hutchinson is the owner/winemaker of Amphopra, a Sonoma-based winery that produces at least a dozen varietals, and he does a really nice job with zinfadel. . .which you can expect to see soon in Carpe Vino.  Another winner was "Sledgehammer" a monster zin at a tiny price, it is aimed at "male millenials" and the wine is made in a partnership with "Man Show" host Adam Corolla.  I also met Aggie Bonpua, CEO of Soulmates Wines which produces a tasty but pricey zinfandel.  Also reconnected with one of my favorite zin producers from Paso Robles, Sextant.  The Night Watch Zinfadel was amazing!
