“Smoked Specialties” are Spencer Smith’s Passion

Spencer Smith has worked at Carpe Vino for nearly three years, and he has developed into key employee whom we depended on to keep our inventory moving. Now he’s helping to add a new dimension to our restaurant menu with “Smoked Specialties.”

Spence’s parents, Debra and the late Gus Smith, were among our most frequent customers when we launched Carpe Vino in 2002.  The Smith’s were building a home in Winchester and they frequented the Friendly Confines at its inception. . .though Spencer was too young to join them.

Following his 2013 graduation from Southern Illinois University (his dad’s alma mater), Spence joined us for what we anticipated would be a short stint.  Now, has developed into a key employee, under the guidance of Chef Alexander, indulging his passion for getting in front of a smoker and producing magnificent ‘que.  His latent talent has been idling since he worked at a BBQ joint near SIU.

He’s enthusiastic and committed to our new venture, and we love the guy!  Here’s more about him–in his words–revealed in our recurring column, “18 Questions.”

1.  Position and start date:  I have dual roles as Warehouse Manager and Pitmaster; started on November 8, 2013.

2.  Birthplace:  Dallas, Texas.

3.  Family:  Are you married, engaged, children. . .? Single

4.  How did you get started in the hospitality business; where else have your worked?  I got a job while in college working in the kitchen at 17th Street Bar & Grill in Murphysboro, Illinois, where I earned a Pitmaster job.

5.  College or formal hospitality training:  Graduated in 2013 from Southern Illinois University with a degree in Business Management and Entrepreneurship  (GO DAWGS!), Carbondale, Illinois.

6.  The part of your job you like best:  Being behind the smoker and seeing smiles on people’s faces because of great food and wine.

7.  If you ran this joint, what would you change?  Get a forklift, and a bigger storage facility.

8.  The book on your nightstand is:  Thrasher Magazine (a skateboarding title).

9.  What do you do for fun?  Are you involved in any sports?  Skateboarding, football, spending time with my family, golf and cooking.

10.  What’s your passion?  Having good times with great people. . .life is about experiences and having fun.

11.  In five years, I’ll be. . .:  Hopefully owing my own BBQ restaurant.

12.  Favorite Carpe Vino dish:  Pickled eggs, but when Chef and the crew in the kitchen make Papusas, they are amazing!

15:  What would we be surprised to learn about you?  I’ve been skateboarding for 17 years and I am obsessed with dogs and football.

16.  What do you like best about living in the Foothills?  Being able to go to snow or the beach whenever I want, but also being away from all the crowds.

17.  What one quality of yours do you think makes you most successful at your job?  Just having a good work ethic. . .my dad always taught me that if I work hard people would respect me and success would follow.

18.  Who in the whole world inspires you most and why?  My parents: My mother is an amazing woman, the rock in our family and I know that I can always depend on her for anything.  My father was an amazing man who came from nothing to having a very successful career and supporting a great family.  I am always trying to make them proud. All-New Dining and Wine Menus Launch Today

When you have a mature business dialed in–especially a restaurant–the notion of making substantive changes can be tough to swallow.  Make a mistake and you risk alienating customers who have no shortage of options.

The only bigger mistake is to do nothing at all, continuing on a predictable path that can encourage previously rabid fans to go elsewhere in pursuit of new and exciting culinary opportunities.  At the same time, making changes can alienate people who become incensed when their favorite entrée disappears from the menu.

Damned if you do; damned if you don’t.

Over our nearly 15 years in business, we’ve maintained a philosophy of continuous, incremental change.  But after a decade of operating a fine dining restaurant, we’re amping up the pace and breadth of change.

It started at the end of June when we ended the 5+-year run of our very successful, monthly prix-fixe series.  After some serious analysis of our operations and the restaurant market, we concluded enough was enough.  Throughout the summer, we’ve explored options and taken stock of our internal resources to reimagine our approach. . .starting with our menus.

All-New Dinner Menu

Beginning last week with a soft launch, our new menu design has been simplified for easier navigation of three new sections.  Here are the major changes developed by Chef Eric Alexander that we hope you will view as substantial improvements; check out details by clicking here.

1.  Previously separate bar and dinner menus have been replaced with a single, one-page menu.  You can order anything on the menu in either the bar or the dining rooms.

thighs.1441492.  Introducing. . .we’re bringing in an entirely new segment:  “Smoked Specialties” prepared by our in-house pitmaster, the very talented Spencer Smith (see his profile below).  Three tangy selections are presented daily: out of the box Spencer is preparing St. Louis Spareribs with his proprietary “Shred Sauce;” Beef Shortrib Pastrami; and Organic Chicken Thighs.  We’re biased of course, but this dude is masterful.

3.  Introducing. . .a selection of five Sides that you can share; some can double as appetizers at the table or at the bar.  The Potato Purée with bone marrow butter is to die for.

4.  Introducing. . .”CV Classics,” the most popular dishes served over the last decade, focusing on seasonal specialties.  Favorites such as steamed mussels, popcorn and chicken liver mousse are among the items currently available.

The heart of Chef Alexander’s menu–Starters and Entrées–are featured prominently.  The menu will change seasonally and we’ll always appeal to diners with special vegetarian and vegan preferences.

For the final stanza, Pastry Chef Courtney McDonald’s talents will be presented on a separate Dessert Menu that includes cheese selections and a “Night Cap” section featuring white dessert wines, ruby port and tawny port.

A Simplified Wine Menu

We’ve also overhauled our Wine Service with what we think are substantial improvements, starting with all wine and beer selections are presented on a single page for easier navigation:

1.  The $5 “Restaurant Service Charge” to open a bottle purchased in the retail wine shop is eliminated.  Too many folks simply did not understand the reason for this charge, so it’s gone.

2.  Carpe Vino’s wine-by-the-glass list now features 30 choices, including more imports and 11 selections between $7 and $10 per glass.  Our compact beer list focuses on local breweries–Auburn Alehouse and Loomis Basin Brewery as well as proven favorites.

3.  Pricing of wines featured on our “Restaurant Kindle List” start at $29.95 per bottle.  All wines are still priced at retail, with no “restaurant” mark-ups, representing an exception fine dining value.

The all-new 2014 Substance “Cs” Cabernet Sauvignon.  One of Carpe Vino’s TOP-SELLING wines last year is on to the new vintage and it’s better than ever!  I had to take a bottle home last night to make sure it was LEGIT and sure enough I was blown away.  If you are a huge fan Washington wines or if you’ve never tried them, this is the perfect wine to dig right into…especially at $14.99/bottle on six or more…You can’t beat that!

 
The 2014 Substance “Cs” is 100% cabernet sauvignon sourced from Goose Ridge and Frenchman Hills Vineyards in Columbia Valley, WA.  I am a HUGE FAN of this wine for one simple but all important reason…FLAVOR!  With its DEEP BLACK INKY HUE, “Cs” generously offers DELICIOUS DARK BERRY FRUITS, subtle HERBACEOUS tones, CHOCOLATE, with just a smidgen of TOBACCO.   I am a proponent of BIG BOLD WINES that exhibit good weight, good depth, and a lingering finish.  This wine has all of that and then some.  It tastes like a wine that would be easily double or triple its value.  The moral of the story here is…you will NOT be disappointed because as the name implies, it has some serious “SUBSTANCE.”

91 Points, Robert Parker’s Wine Advocate “The straight 2014 Cabernet Sauvignon is outstanding. Made from 100% Cabernet Sauvignon, native fermented, aged in French oak and bottled unfined and unfiltered, it’s a killer value that has lots of blue fruits, violets, graphite and leafy herbs in medium to full bodied, concentrated, layered style. Savvy readers should buy a case of this and drink bottles over the coming 4-5 years, although I see no reason that it won’t keep longer either.”

Winery Tasting Notes: “This wine is delightfully forward, showing off a lifted aroma packed with ripe brambleberry, blueberry pie, blackberry jam, cassis and dark cherries. A generous allowance of new oak crafted by our favorite French coopers contributes a mosaic of spices − sweet Madagascar vanilla bean, anise, cinnamon, nutmeg and sandalwood. Dried porcini mushrooms, cola, caramel, cocoa, chai spice and a hint of Earl Grey tea complete the intricately layered profile.

In the mouth, lavish flavors magnify this Pinot’s bouquet. The entry is intense with weighty sweet tannins that are expansive and round, building to a full, lingering finish. This striking wine truly represents Russian River at its yummy best!”

Winery Tasting Notes: “On first impression, this Pinot expresses a rich perfume reminiscent of fraises des bois enhanced with scents of violets, ripe blueberries and fresh rose blossoms. Accents of cardamom, toffee, pepper, cherry cola and anise add exotic notes. Deeper strata reveal a ripe, dark berry core with restrained toasty, savory and gamey undertones.

On the first sip, this elegant yet bold wine shows a ripe entry, dense with black fruit. Its profile displays a fine balance with firm, bright acidity and smooth yet weighty tannins. The mouth-filling viscosity is luscious and silky, leading to a long, full finish. As this Pinot spends time in the glass, it follows its predecessors in revealing its potential for longevity.”
