With Mardi Gras just around the corner (March 5th), what better for a “THURSDAY SMOKED SPECIALITY” than CLASSIC SOUTHERN SMOKED CHICKEN & ANDOUILLE SAUSAGE GUMBO?!? This southern inspired soulful dish starts with a roux that is perfectly light brown resembling milk chocolate in color. Incorporating the southern “HOLY TRINITY” of ingredients; onion, celery and bell pepper we blend in our house-made chicken stock okra interlaced with heartwarming spices of paprika, cayenne and thyme. Finished with Tabasco and gumbo file powder (pronounced “feel-aye,” it’s ground dried sassafras leaves meant to thicken and give flavor). Finally, it’s served with jasmine rice, green onion and micro cilantro. YA-YA!
