That’s why when a customer requested that Pitmaster Spencer Smith prepare some of his “St Louis Baby Back Ribs” for this Thursday, we quickly replied – “DONE!!!” That gets us thinking, what else would you like to see as a “Thursday Smoked Specialty” item?
