Honestly, you do not have to be a “GIN” drinker to enjoy this insanely beautiful concoction.  At first site, this cocktail absolutely captivates you with it’s sheer beauty, but ONE TASTE and your senses are sent on overload!  The Gin being used is Empress 1908, a collaboration between between Victoria Distillersand the legendary Fairmont Empress Hotel in Victoria, British Columbia.  

YES…CANADA!  

What give this GIN it’s unique indigo colour, is their signature “butterfly pea blossom” which you can read more about below.  Also, the Empress 1908 has exquisite, yet delicate citrus and warm herbal notes and super soft texture.  Combined with that with the Italian Liqueur, ITALICUS (slightly bitter, citrus, rose, lavender flavors), housemade rosemary simple syrup and fresh squeezed lemon juice…and you got SOMETHING BEAUTIFUL!

First, we found the EMPRESS GIN via customer request a terrific patron and friend!  Then we hammered our researching tools using our library of books, magazine subscriptions and of course the “www,” but one of the greatest and simplest tools to use INSTAGRAM as a search engine. That’s where we found the “BE PREPARED TO EMPRESSED” just scrolling one morning through a particular “#” feed we follow and boom…this post!

TOOLS – Shaker/Strainer

GLASS – Coupe

  • 1 1/2 oz Empress 1908 Original Indigo Gin
  • 1/4 oz Italicus Liqueur
  • 1/2 oz Rosemary Simple Syrup 
  • 1/2 oz Fresh Lemon Juice
  • Combine all ingredients into shaker w/ ice.  Shake until chilled.
  • Strain into chilled coupe.
