IT’S BACK.  PULLED PORK PLATTER.  BUT, WE KICKED IT UP A NOTCH ADDING AN ENTIRE RACK OF RIBS!  

Since pivoting to a “To-Go” only menu, our two BEST-SELLING items have been the Smoked St. Louis Spareribs and our Pulled Pork Platter.  When Chef Tim Dube and Pitmaster Spencer Smith were discussing options for CV’s weekend special, they thought why not combine both!

It’s no secret that most of the staff here at CV and CVW&S are huge football fans and one of our favorite past times is getting together for a “tailgate” party.  Whether it’s actually in a parking lot outside of the stadium, in a garage or just a backyard, there’s nothing better than talking football, drinking libations and eating some delicious BBQ with friends and/or family.  Thus, we are offering 10 orders of our (tailgate inspired) “TAILGATE PARTY” SMOKED BBQ PLATTER!

As with all of our platters, this is built to serve a small Army as you are getting a whole rack of ribs to start!  Historically, smoked spareribs on our menu would sell for $22-$24 for a half rack and easily satisfied two people.  This platter has DOUBLE the RIBS and that’s just the start!  Believe us this will satisfy a small gathering of 4-6 people or be delicious leftovers for days, if you are just ordering for one or two!  BTW, don’t forget to add a salad or some Brussel sprouts…oh, and check out this new dessert!!!

Yesterday, Chef Tim Dube released three new dishes on the CV “To-GO” menu, including a delicious dessert.  Even though it doesn’t feel like it today, fall definitely is here and this appetizer is an absolutely perfect start to your evening supper: CRISPY BRUSSEL SPROUTS w/ Gochujang Vinaigrette, Miso Aioli, Bonito, Cilantro.  Always a crowd-please at the restaurant…and with a sauce that good, it’s nearly IMPOSSIBLE to not lick the bowl clean!

Years ago (something we are proud to say these days) we introduced you to JELLY JAR!  A new, boutique label out of Lake County that was making some incredible small production Zinfandel and Barbera.  Best part…the PRICE!  We literally went through 100’s of cases until one day…it just stopped. 

That’s the ebb and flow of this business, one minute your selling the heck out of a wine and the next minute it’s gone!  Fact is, with so many new brands coming and going, people just said “what’s next” and Jelly Jar fell off of our radar.

The 2016 Vindicated Cabernet is made by Greg La Follette who worked at BV (Beaulieu Vineyard) under the “Dean of American Winemakers” Andre Tchelistcheff, and the grapes are sourced from select vineyards around Napa Valley/Sonoma County. To top it off Robert Parker’ “The Wine Advocate” rated the overall 2016 NORTH COAST CABERNET A HUGE 96 POINTS!  Now give it the LOWEST PRICE IN THE USA and you have an absolute MUST BUY!

WHAT DOES IT TASTE LIKE?
First it’s 85% Cabernet Sauvignon, 12% Merlot, 2% Cabernet Franc, 1% Malbec.
This wine is round and full, with the tannins and structure one expects from a Bordeaux wine while bringing immediate pleasure to the palate. Notes of ripe berry, cassis and a hint of cocoa are framed nicely by a touch of French oak for added harmony and balance.

Chef Tim Dube & Pitmaster Spencer Smith hit a “HOME RUN” with their collaboration on the PULLED PORK PLATTER we have been serving during recent weeks.  As many of you have purchased (and repurchased) that platter, you know the amount of food was insane and the quality/flavors were to delectable.  With being on our “TO-GO” menu for over five weeks now, we thought it deserved a little break and we would try something new.  Well, how about TRI TIP?!?  Yeah, we know you can make this at home, but take ONE LOOK at the picture below (completely UNEDITED) and we think you might want to hit that “ORDER TO-GO FOOD NOW” button and take a break from cooking tonight, tomorrow or whenever you choose to indulge on this meal!

If you never have had Chef Tim Dube’s “DUCK RAGU” then you are seriously missing out.  This delicately, hand prepared, perfectly seasoned, rich and delicious ragu-goodness…needs to find its way home with you tonight!  The “Strozzapreti” pasta is the perfect vessel for this Ragu as it’s non-uniform broken tubular shape is like a Kangaroo’s pouch for that yummy ragu to nestle into.  Top it of with the parmesan reggiano and you have one insanely awesome dish!
